Savory Herb Biscuits

I tried something new (again) today!  I must admit that I'm not much of a baker but with the surplus Almond and Coconut flour that I desperately need to get rid of, I decided to give it a go.  The shapes leave a lot to be desired and  I need to work on my technique.  The amazing thing about this recipe, which I read about in the 21 Day Sugar Detox meal plan, is that the biscuit batter may also be used to make savory muffins.  So my next attempt will be that!   Interestingly,  you can add or subtract the herb flavor that you would prefer.

Ingredients

6 eggs
1/2 cup melted coconut oil
1/2 tsp apple cider vinegar
1/2 cup coconut flour
1/2 tsp bicarbonate of soda
1/2 tsp freshly ground salt
1 tblsp fresh rosemary or sage leaves, chopped ( I used dried rosemary)

Here's How
  • Preheat oven to 180 degrees celcius
  • In a mixing bowl, whisk together the eggs, coconut oil and vinegar until well combined

  •  Sift in the coconut flour, bicarbonate of soda and salt and stir to combine.  Add the herbs and give it a quick stir


  • Line a baking tray / sheet with baking paper and using a large spoon, dollop the mixture onto the tray/sheet in 12 small portions.  Bake for 20-25 minutes or until golden brown

  • To make muffins, fill 6 muffin liners or muffin cups with the mixture, evenly distributed, bake for approximately 25 minutes or until the muffins are set and the edges turn golden brown
