"Cheesy" Raw Cashew Nut Sauce
During my recent vacation to the Western Cape, I visited the George Farmers' Market where to my delight, a large number of vendors were proponents of Paleo and Raw foods. I started a chat with a Raw Foods fundie who really got me into the raw and whole foods culture and I tried some of his offerings - was so chuffed that I did. He shared a few recipes with me, this cashew nut cheesy-tasting raw sauce being one of them. The nutritional yeast used in this recipe, which gives this sauce it's cheesy flavour and taste, is sugar and processed nasties free and is available from Dischem (Health Connection brand) or Health stores. I added some fresh red pepper for a taste variant but you could omit. I grilled large brown mushrooms with garlic and olive oil in the oven for 10 minutes and added the sauce to it when they were cooked - C'est très magnifique :)
Ingredients
1 Cup raw organic cashew nuts
½ large organic red peppers
¼ cup water
2 tbsp. lemon juice
2 tbsp. nutritional yeast
1 tbsp. tahini
1 ½ tsp. Himalyan salt
1 clove garlic
2 tsp. onion powder
Here's How
Add all the ingredients a blender and blend until smooth. Store in a sealed container in the refrigerator and use within 3-4 days.
