Goji Berries, Maca and Walnut Muffins [Dairy free, Gluten free, Grains free, Sugar free]



Throughout my lifestyle change journey, I have invested in including nutritious Super foods into my lifestyle and have experimented with them in various forms.  Super foods are the most concentrated mineral and nutrient dense organic foods on the planet, with nutrients in their natural form. These nutrients are, therefore, easily absorbed and usable by the body to provide abundant energy. They are high vibrational foods, revered by ancient cultures around the world, which provide maximum energy and healing. 

Goji berries and I experience a long history.  It's been my snack of choice often on days when I am least prepared with my snack options and they have a regular place in my handbag or vehicle console as emergency supplies!  Maca Powder is  is rich with vitamins especially vitamins B1, B2, C and E.
It is an adaptogen so it "adapts" to your body's metabolism, working with your body for optimum results. I have added Maca often into my green juices and smoothies, which tastes like malted Horlicks, it is a great addition to desserts and sweet treats.

Blended with the ingredients listed below, superfoods and raw walnuts, these muffins are packed with energy and nutrition for a pre training or anytime snack or dessert treat. A spongy soft, moist and decidedly maca tasting delight in a muffin.

Ingredients 

1/2 cup dried goji berries
2 heaped tsp maca powder
1/4 cup coconut flour
3 large eggs
1/4 cup date paste or raw honey
1/4 tsp salt
1/4 tsp bicarbonate of soda (activate with touch of apple cider vinegar)
1 tsp vanilla extract
1/4 cup chopped walnuts


Here's How
  • Preheat the oven to 180 degrees Celsius
  • Soak the goji berries in a cup of water for at least an hour until they are plump. Strain off all liquid and keep goji berries aside.
  • Sieve the coconut flour into a large mixing bowl. Add the activated bicarbonate of soda, (or sieve the bicarb with the coconut flour) maca powder and salt.
 
  • In a separate bowl, whisk together the eggs, date paste or honey and vanilla extract.

  • Gradually add the wet ingredients to the dry, stirring into a batter.
  • Fold in the goji berries and the walnuts.
 
  • Transfer to a greased or lined muffin tray – using roughly one tablespoon or ice cream scoop per muffin, the mixture should make about eight muffins.
 
  • Bake  for 10-15 minutes. Cool and store in an air-tight container.  These store in the refrigerator for up to 5 days.
