I decided on trying out a gluten free bread using combination of almond flour and flax seed flour, a recipe which I sourced from Grainfree Living. This was to sate a huge processed breads and rolls craving that has been doing regular rounds in the recent few weeks which I have managed to keep at bay but thinking about it constantly made me want to try a slightly different loaf than the ones' I have attempted recently. I also realised when preparing the ingredients for this bread, all my breads have been a once baked attempt for myself, so it's a pretty good record in avoiding breads I think!
This bread is slightly different in the ingredients as I have omitted the apple cider vinegar and used water instead, just a small amount to round off the flour, eggs and oil mixture to bring it to a thick batter consistency. The inclusion of salt and pepper makes this an interesting-tasting loaf and while I was putting the ingredients together I realised that nuts and seeds added to the mixture will create a seed loaf, which I have yet to try out.
I used sesame and sunflower seeds to complete this loaf just before baking. This loaf produces a "thick" tasting bread - which will store for up to a week in the refrigerator. The texture lends itself to being toasted, which will appeal to those wanting a low carb breakfast bread alternative every once in a while.
Ingredients
1 1/3 cups flax flour2/3 cup almond flour
1.5 tsp cream of tarter
1 tsp bicarbonate of soda
4 eggs
3 tbsp olive oil - you may also used flavoured extra virgin olive oil for a different tasting loaf
salt and pepper to taste
A tiny bit of water (1/4 cup is sufficient) to achieve the required consistency.
Optional - nuts and seeds as desired, in small quantities
Here's How
- Preheat oven to 180 degrees Celsius.
- Place all the dry ingredients in a bowl and mix well to combine- I used a food processor.
- Add all the wet ingredients and mix into a smooth batter
- Pour into a greased loaf tin, greased with coconut oil or line the baking tin with baking paper
- Top with sesame seeds or seeds of choice.
- Bake in the oven at 180 degrees for 40 mins or until a skewer comes out clean. Enjoy!
