Cauliflower Sandwich Slices or Bread Sticks [Dairy free, Gluten free, Grain free, Sugar free]


Cauliflower is very versatile!  Following from my low carb plan days with successes in making the cauliflower pizza base and cauliflower rice, and more recently the cauliflower wrap, I realised that like aubergines (brinjals), butternut and sweet potato,  "sandwich slices" and bread sticks could also be made, with the same amount of effort and time as with the wraps or pizza base and basically, the similar ingredients, but more popular is a simple baking or grilling of the choice of "sandwich" or "bun".   The preparation of the cauliflower is similar to that of the preparation of the wrap  but I used the cauliflower dumpling method, to get the cauliflower to a flour-like stage and adding in the other ingredients to make the 'dough'. It is versatile in its' preparation too - so you can choose how you would prefer to prepare the cauliflower.

You may also add any flavouring you desire and those having cheese in their plans, may add this in for a cheesy breadstick or sandwich slice. This recipe may also be used for another version of the cauliflower pizza base.

Ingredients

1 large cauliflower
1/2 - 1 tblsp origanum
1/2 tblsp basil
1/2 - 1 tbslp onion powder
1/2 tsp red pepper flakes
2 eggs, whisked
salt and pepper to taste
garlic powder to taste

Optional
Nutritional yeast flakes or mozzarella cheese
fresh garlic
fresh herbs
1 tblsp powdered raw almonds or almond flour to bind.
1 tblsp chia seeds soaked in two tablespoons of water.



Here's How

 

 
  • Preheat your oven to 200 degrees celcius
  • Process the cauliflower in a food processor till it reaches grain-like/cauli rice consistency
  • Steam the cauliflower rice for 10 minutes adding a quarter cup of water for steaming
  • Once steamed, remove from the stove top, steamer or microwave oven and set aside allowing it to cool.
  • Once cooled, wring out the excess moisture by wrapping the cooked cauliflower in a clean kitchen towel and twisting the towel to remove the moisture.
  • Add the cauliflower to a mixing bowl and add the beaten egg and seasoning of choice and mix till all the ingredients are well blended.
  • Grease a baking sheet or preferably, line with baking paper and pat the cauliflower onto it at the desire thickness, ensuring that there are no spaces in the cauliflower - it should be a tight pack.  You may want to add a tablespoon of almond flour to bind the mixture but this is not necessary.
  • Place the tray in the preheated oven and bake for about 25 minutes until the cauliflower mixture is cooked and is evenly browned.
  • You may want to remove from the oven, cut into your desired sandwich or breadstick sizes, flip over and allow the other side to be equally browned and the desired crispiness is reached.

Serve with a filling or with a dip as desired
