Hamburger Patty with Green Banana Mash and Red Pepper Sauce



                                   
I'm always out to try innovative eating and increasing my data base of recipes that will assist myself and others in being creative in the meal preparations.  I  recently came across this recipe  by South African (Durban lol) Rani (Queen) of  Indian Cooking, Asha Maharaj and adapted it for a low carb meal.  Tried and tested, it hits the spot if you're craving burgers with a spicy twist and is easy, (if you love cooking) to make,  nutritious and low carb. 

The banana mash and red pepper sauce add distinction to a plain meat patty.  Note that only green bananas should be used, these are generally found in fruit and veggie stores. I didn't use full quantities for the banana mash and adjusted this recipe accordingly.  This is a recipe that is pure labour of love that I thoroughly enjoyed making.


Banana Mash

Ingredients
6 green bananas
1-2 cups coconut milk
2 tblp coconut oil
salt to taste
1-2 tsp chilli flakes
1/2 tsp cumin seeds
1/2 tsp black mustard seeds
curry leaves,
finely chopped handful of finely chopped shallots


Here's How
  • Boil un-peeled bananas in water for approximately 30 minutes until well cooked
 
  • Allow to cool, remove skins and grate or mash the bananas
  • Add coconut oil to a frying pan and add spice seeds and curry leaves. 
  • When the seeds splutter, stir in shallots and banana pulp
  • Stir fry lightly and add chilli flakes and coconut milk
  • Lower the heat and cook until the mixture is reduced.
  • Season and remove from heat

Burger Patties

Ingredients
500g beef or lamb mince
1 tsp garlic and ginger paste mix
1 tbslp roasted masala (or masala of choice)
green chillies as desired  (optional)
fresh  mint and coriander
1 medium onion chopped
1 egg
salt to taste


Here's How
  • Place mince, garlic-ginger paste, masala and chilli's in a food processor and blend
  • Remove to a bowl, add the fresh herbs, onion, egg and salt
  • Knead and divide into 4 portions
  • Shape well into burgers
                                
  • Cook on a griddle or shallow fry until well browned and cooked through




Red Pepper Sauce

Ingredients

1large red pepper
1 large red tomato
2-4 cloves unpeeled garlic
1 small onion, unpeeled
2 tsp chilli flakes
Freshly milled salt and pepper to taste


Here's How 
  • Roast the red pepper, tomato, garlic and onions, remove all skins add to blender and blend until smooth.
  • Season well and serve.
