My latest roasted veggie mini- facination is Cauliflower “Popcorn.” I ate these slow roasted tasty little florets as a snack but imagine they will serve very well as a sweet snack or a savory side dish. On the two occasions that I made them, I varied the seasonings from to include cinnamon (this one was sweet as I used coconut oil to roast the cauliflower florets) cayenne pepper, chilli powder and paprika with cumin, depending on my mood. As Cauliflower has a very neutral flavor you can really get creative!

Ingredients
1 small to medium sized cauliflower
1.5-2 tablespoons olive oil or for a sweeter taste use the same amount of coconut oil
Possible seasonings:
Salt
Cinnamon
Cayenne pepper
Chilli powder
Cumin powder or roasted and crushed cumin seeds
Tumeric powder
Here's How
- Preheat oven to 220 degrees celcius
- Trim only the florets off the cauliflower - could be a little largish in size, noting that they will shrink a bit in the roasting process
- In a large bowl, add salt and olive oil and mix. Add in cauliflower florets and toss well ensuring all the pieces are evenly coated.
- Spread the florets on an oven tray
Roast in the oven for an hour, turning the florets about every 15 minutes All the sides of the florets should be well caramelized - noting that as the cauliflower browns, the taste becomes sweeter!
- When done, remove to a serving bowl and eat while warm. Have fun selecting the Popcorn seasoning flavours that work for you!
I bought cauliflower yesterday. I haven't tried your cauli-rice yet, but that's the plan.
