Ostrich Mince, Lean with a mean punch cooked Indian Style ;)

So today I attempted an Ostrich mince curry - as usual I attempt to curry everything - it's the only way I know how to cook a good meal!  :)  I was pleasantly surprised with the end result and served it on a bed of fresh cooked spinach and a Mediterranean cucumber, Rosa tomato, hot green chilli (of course!), fresh coriander salsa drizzled with freshly squeezed lime juice.  The recipe below may be used to cook beef, chicken or lamb mince. Vegetables like baby marrow (courgettes) and brinjal (aubergine) may be added to bulk up the meal.



Ingredients

2 tblsp extra-virgin olive oil
1/2 an onion finely sliced
2 green chilli's slit lengthwise, then quartered
a few sprigs of curry leaves
2 tblsp freshly ground garlic and ginger
1 tsp cumin seeds
1 small stick cinnamon
1 green or white cardamom pod
1/2 tsp fennel seeds
1/2 tsp turmeric powder
2 tsp chilli powder
1 tsp coriander powder
1 tsp garam masala [ See recipe for Garam masala further down this blog]
500g lean ostrich mince
1 grated tomato
Himalayan salt to taste (about 1 tsp freshly ground)
Fresh coriander to garnish

Here's How

  • Add olive oil to a non stick pot
  • Thereafter add the cumin and fennel seeds, cinnamon stick and cardamom pod and allow to sizzle for a few minutes
  • Add the sliced onions, curry leaves, green chilli and braise till the onions are translucent
  • At this stage add the ginger and garlic and cook until a paste mixture is formed, thereafter add the powdered spices.  You may add about a quarter cup BOILING water now. And allow the powdered spices to infuse for about 5 minutes.
  • Now you may add the mince and grated tomato and salt.
  • Cook for about 15 minutes and turn off the heat. 
  • Garnish with fresh coriander
