Yesterday was a bit of a helter-skelter day, kids parties, fresh produce stock up, a normal Saturday run of the mill kind of day, also a bit lazy too and the fact that it was chilly most of the morning made it ideally a comfort food kind of day AKA known as weekend eating. Not to be outdone by the family who were scoffing on all things in their words "yummy" I happened upon an old friend from years ago that made their way onto my recipe file and gave it a try - this is something I had made about two months ago but without the any natural sweetness, being the savoury eater that is me!
The benefits of adding flaxseed, especially flax seed flour, to a low carb eating plan is that it has lots of fibre and is healthy fat, and very low in carbohydrates. And it's tasty, with a delicate nutty flavour. Flax seed is very high in fiber. Drink lots of fluid while eating flax. Whole flax seed will sail right through you!!!
A relatively easy and quick recipe made in a large mug and cooked in the microwave, leading to a delectable and an ideal in-betweener for those struggling to find a healthy balance in their meal plans.
One Minute Paleo *Flax Muffin
Ingredients
3 tblsp. *Flax flour
1/2 tsp. baking powder (the gluten and starch, preservative-free kind) or 1/2 tsp Bicarbonate of soda
1 tsp. melted **coconut oil, or olive oil
1 egg, lightly beaten
(I added half a mashed banana as seen in the pic above)
You may add-in any of the following: berries, 1/2 mashed banana, nut butter, shredded coconut, 1 tbs. raw cocao powder, 1 tsp. cinnamon
OR opt to have it without any addition, in this instance, use the first four ingredients only and add a pinch of salt to have as a savoury muffin with your breakfast or any meal.
Here's How
Combine all ingredients in a microwave-safe mug and heat on high for 1.5-2 minutes. Remove with towel or pot holder and turn upside-down to dislodge muffin.
Cut into rounds and eat immediately!

* Flax flour available from Dischem and all Health food stores. You can purchase flax seeds and grind them to flour consistency in a coffee grinder.
**Coconut oil - use the non-perfumed variety available from Dischem or Health food stores
