Cauliflower Pizza Base (So good you won't miss the real wheaty, gluten, sugar laden one!)

Again, this tried and tested Cauliflower Pizza base recipe is from the Atkins forum from a while back, I have made this numerous times and have been successful each time.  To ensure a succulent pizza is obtained, I use a home-made tomato, onion and chilli gravy over the base, top with brinjal, (aubergine), baby marrow (courgette), mushrooms and jalapeno pepper for a vegetarian pizza delight.  Cooked minced lean lamb or beef, and chickens strips will work well too.  This recipe makes 1 small pizza base, doubling the quantity makes a medium one.



Ingredients

1 cup cooked cauliflower rice
1 egg
1/2 tsp fennel
1 tsp oregano
2 tsp parsley



Here's How

Preheat oven to 230 degrees celcius.


Line a baking sheet with parchment paper/wax wrap.  I used a perforated pizza baking pan.

In a medium bowl, combine cauliflower, and egg . Press evenly and tightly on the  pan. Sprinkle evenly with fennel, oregano and parsley.

Bake at 230 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, add the home made sauce, then toppings.

Place under the grill at high heat for about 4 minutes.
